Film-forming coatings can hide the natural beauty of your timber, which goes against the reasons you chose timber in the first place.
They can breakdown and peel, letting in moisture and trapping it behind the remaining film. That leads to ugly, unsightly mould and stains, and further deterioration of your precious timber.
